The restaurants will be aware that you are going to be surveying their location as they have been contacted in advance. However, we recommend that you have this letter on hand when you survey the restaurants in case you are questioned as to they you are taking photos at the restaurants. You do not need to present this letter to the restaurant upon arrival, only if you are asked to present it.
